The Bikini Cocktail
Makes enough for 10 people
To make the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Place all the items in a pot, bring to a simmer, agitating to dissolve. Then, turn off the heat allowing it to cool down fully. Transfer to a sterilised bottle, close it and refrigerate it in the fridge, where it will keep for around a month.
To make Batch Mix: Mix all the liquids into a sizeable container, allow it to infuse for an hour, then strain best through muslin, so it's completely strained.
For serving: Add 85ml of the premix to a mixing glass filled with ice, gently stirring carefully for about 60 seconds until cold. Pour into a chilled martini glass or equivalent, top with the cranberries and finish with a brief mist of the essential oil over the top.
